Macaroni and Cheese

Ingredients:

2 cups whole wheat, elbow Macaroni
½ cup grated, reduced-fat cheddar
1/3 cup skim milk
2 Tablespoons, sliced scallions
1 egg white, lightly beaten
2 Tablespoons nonfat Parmesan cheese (Optional)

Instructions:

Cook the macaroni according to package instructions, and drain. Place the macaroni in a large bowl and add the cheddar cheese, milk, scallions and egg white. Stir well. Preheat oven to 375 degrees. Place the macaroni in a nonstick casserole pan and sprinkle the Parmesan cheese on top. Bake about 25 minutes or until the top is browned and firm. This recipe makes six servings.

Here's how this macaroni and cheese recipe was remixed:

  • When possible, substitute enriched, white pastas for whole wheat pastas. They have come a long way in the areas of taste and texture. In addition, many are enriched with beans and are full of protein, too. If you’re new to the taste, start out by mixing whole wheat pastas with enriched, white pastas.
     
  • Reduced-fat cheddar replaces the full-fat variety in this recipe, saving a ton of calories but not skimping on taste. There are a variety of low-fat cheeses on the market today. Start replacing part or all of your cheeses with a low-fat variety.
     
  • One egg white keeps the dish together instead of the usual two-to-three eggs called for in traditional dishes.
          
  • Fat-free milk adds the necessary moisture and creaminess without adding additional fat to the dish.
         
  • Full-fat cheese in moderation is okay, but there are some okay low-fat and nonfat options available, too.  If you want to splurge a bit with full-fat cheese, do it with a bit of Parmesan cheese sprinkled on top of this dish. Parmesan cheese is very fragrant and delicious. A little bit will go a long way in this dish.

Here are some insider tips you need to know:

  • Stock up on whole wheat pasta when it goes on sale. A single box is more costly than enriched pastas, averaging about $2 per box.
     
  • Parmesan cheese is expensive. If you can splurge on a small piece in your deli case, go for it. It usually costs about $8.99 per pound or more. Instead of the shelf-stable cheese (which should be refrigerated after opening), buy fresh, pre-shredded parmesan cheese in the refrigerated section. A bag costs about $3.29.
