If your kids are like mine, they’ll love these tasty baked chicken nuggets that are low in fat. They are a healthier alternative to fast food or store-bought chicken nuggets. Your kids will be happy to find these chicken nuggets in their school lunchbox.
Ingredients for 6 portions:
1½ pound skinless, boneless chicken breast (uncooked)
1 cup bread crumbs
½ cup grated Parmesan cheese
1 egg
¼ cup skim milk
½ teaspoon salt
¼ teaspoon ground pepper
1 or 2 teaspoons herbs of your choice, dried and crushed (parsley, oregano, basil or thyme)
Preparation:
Preheat the oven to 400 degrees.
Cut the chicken into 1.5 inch rectangles.
In a medium bowl, mix the bread crumbs, grated cheese, salt and herbs.
In another bowl, mix the egg and milk.
Dip the chicken in the egg and milk mixture and then coat well with the bread crumb mixture.
Place breaded chicken on a cookie sheet lightly greased with oil and cook for 15 minutes. Remove from oven and flip the chicken pieces, cook for an additional 5 minutes.
This is a great recipe to cook with your kids. You can cut the chicken, break the egg and take care of the oven while they do the rest. Just make sure they wash their hands after handling the raw chicken.
